A delicious (and kid friendly!) twist on fish

I love salmon for its content of lean protein, heart healthy Omega 3s, and versatility, but even I get tired of it sometimes.
CUE CRISPY SALMON NUGGETS!
I decided to test out something different in our air fryer and I was not disappointed! This recipe comes together with just a few ingredients and hardly any time. Best of all, my daughter now requests this just as often as she asks for her usual chicken nuggets. Huge mom win there!
I see lots of potential with this recipe. I used a teriyaki marinade because we were having rice bowls. But depending on what you are pairing the salmon with, you could use other marinades or spices as well. Use this as a base recipe to make protein for bowls, tacos, salads...get creative!
Here’s how to make it:
Ingredients:
1 pound of fresh salmon
1/4 cup teriyaki sauce
1-2 cups of panko breadcrumbs
Instructions:
Remove skin from the salmon and cut into bite size pieces. Place in a bowl.
Pour teriyaki sauce over the salmon bits and stir to coat. Cover and marinate for about 30 minutes.
Pour breadcrumbs into a dish. Depending on your preference, you may want to crush the breadcrumbs a little bit. Sometimes the particles can be too big and don't stick to the salmon as well.
Toss each salmon piece in the breadcrumbs until it is covered with breadcrumbs.
Place salmon pieces in air fryer in a single layer (you may need to cook in 2 batches). Air fry at 400 for about 8 minutes, until salmon is cooked but still tender.
Pair with your favorite sides and enjoy!
