Marry Me Chicken Meatballs

A simple spin on this cravewrorthy dish the family will love!


I can barely go one day on Pinterest or Instagram without stumbling upon a Marry Me Chicken recipe. And what's not to love? It always looks so creamy and comforting!


I put my own spin on it to make it slightly more appealing to my kiddos. Instead of searing chicken breasts, I just use ground chicken to form meatballs. Everything is cooked in a pan on the stovetop and will be on your table in about 30 minutes. The result is an insanely delicious, high protein meal that will kep everyone satisfied.


Here’s how to make it:


Ingredients:

  • 2 pounds ground chicken

  • 1 egg

  • 1 cup panko breadcrumbs

  • 1 cup basil, thinly sliced

  • 1 tsp paprika

  • 1 medium shallot, minced

  • 2 tbsp garlic, minced

  • 1/4 cup chicken broth

  • 1 13.5oz can coconut milk

  • 1 tbsp arrowroot powder

  • 1/2 cup sundried tomatoes, thinly sliced

  • salt & pepper to taste


Instructions:

  • In a large mixing bowl, combine ground chicken, egg, breadcrumbs, 1/4 of basil, paprika, salt and pepper. Mix well until thouroughly combined. Form meatballs and set aside on a plate (should yeild about 16 meatballs).

  • Heat a large skillet on the stove. Working in batches and making sure not to overcrowd the pan, place the the meatballs in the pan and cook until each of the sides are golden brown. Move to a plate and cover with foil, then repeat with the remaining meatballs.

  • With the heat still on, add shallots to the pan. Sauté for a minute or two until they are tender and fragrant. Add garlic and cook for 30 seconds. Add broth and stir, scraping up any brown bits on the pan.

  • Add the coconut milk to the pan and raise the heat to a low bubble. Stir in the arrowroot powder. Let the mixture cook for about 2 minutes, stirring occasionally.

  • Add remaining basil and sundried tomatoes to the mixture. Then add the meatballs, coating them in the sauce. Let them sit until they have finished cooking.

  • Pair with your preferred sides (we loved it with green beans and cacio e pepe orzo) and enjoy!
