Chocolate Mousse Cups

A satisfying sweet treat with added protein!


Confession: since my last pregnancy, I have had a sweet tooth like never before. Yes, that was over 2 years ago, and yet it STILL haunts me!


I have no problem with indulging my sweet cravings, but sometimes that only makes the craving stronger. So lately I've been on a mission to find solutions that satisfy my need for sweets without making the problem worse.


I'll be honest, most "healthy" alternatives are lacking. But this is a simple recipe I keep coming back to.


It's rich, it's creamy, it's filling, it just hits all the high notes.


I love using Siggi's vanilla skyr whole milk yogurt for its higher protein content. As a fair warning, this will have a little bit of that yogurt funkiness, so if that's not your jam, choose another high protein yogurt you prefer. I do find that it mellows out after a day or so.


Use whatever chocolate chips you prefer. The darker the chocolate, the lower the sugar content.


To be clear, this is not necessarily a low sugar dessert. But when my previous habit was picking up a huge slice of cake from the store multiple times a week, this is a much better option for me. Finding what works for YOU is crucial to building a sustainable nutrition plan for a long term lifestyle.


Here’s how to make it:


Ingredients:

  • 1 4.4oz container of Siggi's vanilla skyr whole milk yogurt

  • 1/3 cup of chocolate chips

  • 1 tsp coconut oil


Instructions:

  • Bring a small pot of water to a low boil.

  • Make a double boiler by placing a bowl that sits on top of the pot without touching the water. Combine chocolate chips and coconut oil in the top bowl.

  • Stir the chips until they have melted and become smooth. Remove immediately so they do not burn.

  • Let the melted chocolate cool for a minute or two, then add yogurt. Stir until chocolate is completely incorporated into the yogurt.

  • Divide mixture into 2-3 small ramekins let them cool. Cover with cling film and store in the fridge for up to 4 days.
